I have gotten tonights dinner all prepped and ready to throw in the oven. I have to say that I am extrememly excited about tonights meal...and I haven't even cooked it yet! Tonight I made Foil-Packed Chicken Fajitas, but I tweaked it a little. You will see in the instructions that you are supposed to make little foil boats for each persons meal to be cooked in, but after about an hour of trying to make those stupid boats I just decided to make one big boat with my 9x13 pan as the bottom of the boat. I hope it works the same, which I am sure it will, but I'm not going to kill myself over little foil boats! LOL!
Here is the recipe:
What You Need
1-1/2 cups instant white rice, uncooked
1-1/2 cups hot water
1 Tbsp. TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
4 small boneless skinless chicken breast halves (1 lb.)
1 each green and red pepper, cut into strips
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/2 cup KRAFT Mexican Style Finely Shredded Taco Cheese
Make It
HEAT oven to 400ºF.
FOLD up all sides of each of 4 large sheets of heavy-duty foil to form 1-inch rim; spray with cooking spray. Combine rice, water and taco seasoning; spoon onto foil. Top with remaining ingredients.
BRING up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
BAKE 30 to 35 min. or until chicken is done (165ºF). Let stand 5 min. Cut slits in foil to release steam before opening packets

Reviews: Ryan loved it. Kouper liked everything but the red peppers and I totally loved it! I will deffinatly be making this recipe again!
Dinner for Tomorrow: A whole roasted chicken with mashed potatos and green beans! Can't wait!
