Foil-Pack Chicken Fajita Dinner...kind of!

Hello Dinner Time Folks!

I have gotten tonights dinner all prepped and ready to throw in the oven.  I have to say that I am extrememly excited about tonights meal...and I haven't even cooked it yet!  Tonight I made Foil-Packed Chicken Fajitas, but I tweaked it a little.  You will see in the instructions that you are supposed to make little foil boats for each persons meal to be cooked in, but after about an hour of trying to make those stupid boats I just decided to make one big boat with my 9x13 pan as the bottom of the boat.  I hope it works the same, which I am sure it will, but I'm not going to kill myself over little foil boats!  LOL!

Here is the recipe:

What You Need

1-1/2 cups instant white rice, uncooked
1-1/2 cups  hot water
1 Tbsp. TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
4 small  boneless skinless chicken breast halves (1 lb.)
1 each green and red pepper, cut into strips
1/2 cup  TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/2 cup KRAFT Mexican Style Finely Shredded Taco Cheese

Make It

HEAT oven to 400ºF.
FOLD up all sides of each of 4 large sheets of heavy-duty foil to form 1-inch rim; spray with cooking spray. Combine rice, water and taco seasoning; spoon onto foil. Top with remaining ingredients.
BRING up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
BAKE 30 to 35 min. or until chicken is done (165ºF). Let stand 5 min. Cut slits in foil to release steam before opening packets

Okay so for some reason the after photo didn't come out...but let me tell you that dinner was YUMMY!!!  OMG it was so good.  The Taco Bell Salsa tastes like enchallada sauce.  Since the recipe said "fajita" I thought it only fair to try cutting up some chicken and putting it in a tortilla!  That was also super yummy!!

Reviews:  Ryan loved it.  Kouper liked everything but the red peppers and I totally loved it!  I will deffinatly be making this recipe again!

Dinner for Tomorrow:  A whole roasted chicken with mashed potatos and green beans!  Can't wait!

Weeknight Skillet Lasagna

Last night we started the "new meal 4 nights a week" challenge in our house!  We are really excited about not only this blog but also trying a new recipe each and every night that we can, with no less than 4 nights a week!  We believe that not only will this bring our family together closer, but it will also limit the amount take out food that we are eating, which will lessen our monthly budget!

Last night we had Weeknight Lasagna Toss which I found on www.kraftfoods.com once again!  I do love this website it would seam.  The meal was amazingly easy to cook and got mostly positive reviews from the family.

Skillet Lasagna
This meal was super easy to make...the biggest things to make sure of is to make sure that beef doesn't get over cook or the noodles.

The recipe is:

What You Need

1 lb. lean ground beef
2   green peppers, chopped
3 cloves garlic, minced
1 jar  (24 oz.) spaghetti sauce
1-2/3 cups water
1/4 cup  KRAFT Zesty Italian Dressing
12 oven-ready lasagna noodles, broken into quarters
1 cup  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
 

Make It


BROWN meat in large saucepan; drain.
ADD peppers, garlic, spaghetti sauce, water and dressing; bring to boil. Stir in noodles; cover.
COOK on medium-low heat 10 to 15 min. or until noodles are tender, stirring occasionally. Remove from heat. Sprinkle with cheese; cover. Let stand 5 min. or until cheese is melted.

The family reviews were a little mixed!  I personally loved it, but anything with green peppers and marinara sauce is a winner to me!  Kouper loved it...but Ryan said that it wasn't his favorite!  He isn't that big of a green pepper fan.

Tomorrows Dinner:  Foil-Pack Chicken Fajita Dinner

Stuffed Chicken-Parmesan Bundles

Good Morning Everyone! 

Normally on Christmas Eve my parents cook dinner, but this year I decided that I wanted to take over that job!  I knew that since my parents are amazing cooks whatever I made would need to fantastic...so I took a chance wtih a recipe that I found on http://www.kraftfoods.com/.  I made Chicken-Parmesan Bundles that were stuffed wtih a cheese, cream cheese and spinich stuffing.  It was AMAZING! 

The Stuffed Chicken!

Kouper looked at the chicken and said that he wasn't going to eat it, but of course he knows that saying that doens't really mean anything in our house!  I'm not a short order cook and you are going to eat what I cook or starve.  LOL...mean  I know! 

The recipe was pretty simple, and here it is:

What You Need

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg.  (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp.  KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1   egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups  spaghetti sauce, heated

Make It

HEAT oven to 375ºF.
MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and remaining mozzarella.

 
Reviews from the family were great!  The only thing that was suggested was seasoning the chicking a little bit before stuffing it and coating it!  Other than that the meal was a huge success!  Even Kouper ate it up after a little fighting back...and ended up loving it!

What Am I Doning?

Okay...while I am sitting at home trying not to go shopping because I still don't have a job, I have decided that I am going to try new recipes!  I am trying to be budget friendly with cooking and this is becoming a challenge for me!  I like to save money each and every way that I can, but more so I enjoy impressing my husband with new recipes each and every night for dinner.  I would like to say that this is come Julie & Julia thing, but that would be a lie...really nothing that I am cooking is that decedent...but it is all pretty yummy!  Well so far at least!  I really think for the most part this blog is just a journal of my efforts at bettering my self in the kitchen!  Each time I make new recipe I will post a picture of it, the recipe and the review from my family!  I hope this inspires other to try new recipes and meals with their families!

P.S. I have to say that this is a lot of experimenting for myself along with my families taste buds...but we are sure enjoying the experience!  It is getting my 6 year old to eat new things that he "doesn't like" and after trying realized that he actually does!
